Coconut Pudding

This was supposed to be a gelatin/jello kind of dessert but it never solidified. I guess not enough gelatin. I boiled coconut milk (the light version), vanilla, anise and pink food coloring with some cane sugar.


Poured into vintage tin molds after straining out the anise seed. It was a very good pudding but not what I expected. I served it with chocolate covered bananas.

Coconut Rice Pudding

I wanted to make bibingka but I wasn't in the mood for any of the recipes I found. So I compromised and made stove-top rice pudding with coconut milk. If I made this again I would use shredded coconut as well to bring out the flavor, and top with toasted coconut I think.

Ingredients assembled, raisins soaking in rum,


Milk and spices added to cooked rice,


Raisins (and the rum too, why not) and butter and vanilla added,


And plated,

Coconut Rum Shake


For fun, I blended 1 frozen banana with a half cup of rum and about a cup and a half of coconut milk (the light variety). I added a handful of ice cubes and a bit of splenda, and topped with cinnamon. Mmmm!
